Tortilla soup is very good comfort food, and also a good way to clean out the fridge. This one I made with garlic, poblano chiles, tomatoes, shredded chicken, and spices.
Ideally you should made this from a whole chicken, then strain out the bones. But in a pinch I made it with chicken breasts in the pressure cooker for a few minutes and a 2 hour soup turns into 20 minutes.
Garnish with avocado, tortilla chips, and more hot sauce.
